It shall be lawful for each party at all times hereafter to live separate and apart and free from all marital control and authority of the other party, as if each of them were single and unmarried. Essentially it says that you're "really" separated.

That is, if these people that are going to be around any children have a shady or criminal past, it could be relevant as to custody. It does mean that your spouse can't stop you from dating or try to get involved in your dating life. While it's true that post separation adultery (defined as a married person engaging in sexual intercourse with someone not your spouse) could impact what you receive in a divorce, that doesn't mean that you cannot date.
But as to anything else, it would likely be irrelevant, and unless the separation agreement says specifically that you're not to start dating for a specific period of time, it would be okay to date prior to the divorce being final. The only way that a new relationship will be a factor in the divorce is if there are minor children involved and there are issues with the potential love interests.
A marriage may erode; trust may falter; a spouse may be unfaithful but the other spouse not notice right away.
If your marriage does not come to a crashing close, like the final act of an opera, you may not even understand the legal importance of the date of separation.
Upon motion of either party made no less than 21 days before the evidentiary hearing the court may, for good cause shown, in order to attain the ends of justice, order that a different valuation date be used.
